Brining Chicken Wings

I am making 30 chicken wings for a party. I cut off the tips and cut the two parts of the wing in half. I always marinate them and then dust them with a rub.

Is it o.k. to brine chicken wings ? If so, what would be the measurements of the salt and the sugar to go into the water ?

    Morning Gary:

    I brine wings (and all chicken) all the time.

    My "normal" brine consists of...

    3 qts. water
    0.5 cup kosher salt
    0.5 cup Turbanido (raw) sugar
    splash (maybe 1/8 cup) soy sauce
    splash (maybe 1/8 cup) orange juice
    3 to 4 tablespoons of honey

    Mix it well together (not heated!!!!), just mixed/stirred until all the salt & sugar dissolve. Put wings in for about 2 hours.
