Dinner - NOT turkey!

Cooked some tocino (a philippine cured pork) and a couple of marinated chicken breasts to be added a nice big caesar salad I made for dinner tonight. Marinated the chicken in a bit of olive oil, some Penzey's Turkish seasoning, lime juice, garlic and yogurt.

Actually - you buy it frozen, thaw it, put it on the grill! I've never made it from scratch - hard to find a recipe. But the research I've done leads me to believe it's cured, coloured with anatto and has lots of sugar on it.

Love me some tocino, had a roommate in college from the Philippines and he got me hooked on it. His preferred method of eating it was fried and as a side with quail eggs for breakfast....good for a hangover cure if I recall too!
