I have a new XL BGE and I have a few basic questions and I'm hoping learn from your experience rather than just my trial and error. When using a platesetter, are there different effects from using it legs up vs legs down? Is there a right way? What is the best way to start lump charcoal if the firebox is mostly full? I've always used a charcoal chimney but that won't work for that much lump charcoal. How accurate do you find the thermometer on the BGE to be? Is it worth buying a wireless meat probe? Thanks all!!
