On through the night...love it when I get to smoke a Boston Butt and able to get some sleep. I only had to adjust the vent one time, It helps that I have a remote thermometer so I am not back and forth worrying about the temp. It is so nice to wake up and open my back door to the wonderful smell of my pork butt. Every time I do this, I think that I am driving my neighbors nuts with envy. Who knows? Anyone know the band I referenced in the opener?
