If time is your issue, just get a sous vide if you what a new toy. (I bought one recently) and it does the leg work for you, and you can still light up the egg to finish your cook (or not)

just my my two cents, but having a pizza oven would be awesome too, just not sure it fixes your time issue.
I've had an Anova set up for 3 years now.  I still use it and like it for certain things, but like to have other options.
  • Redfish on the Halfshell

Caught some reds today out of Lake Borgne. Filleted them and left skin on one. Seared the flesh with a blackened style seasoning in the cast iron, then basted with white wine/butter/lemon juice/ponzu sauce. Skin side got oiled and down on raised direct 350 egg with apple wood. They cooked ~10 min and then came off and under foil for a moment. Served with a bit more sauce spooned over. Came out great. Really liked the applewood with this.

Got a Panasonic 60ST60 plasma TV during Black Friday since this is the last year they will be made. Told my wife not to get me anything else. She did not listen: image New Stoker and Anova circulator. Totally surprised and very happy.
  • Re: Cleaning ashes

Bought a cheap shop vac from costco dedicated to Egg.  It lasted 3 cooks.
