I think this is entirely worth the work, particularly with game hens. No bones to fool with when you're eating, wonderful flavoring from filling, and it's just plain gorgeous. And you guys go through some elaborate prep for your cooks; this is no more time consuming. Another bonus: It cooks quicker than a bone-in chicken.
The amount of stuffing: 2 cups is quite a bit. I use a little more than a cup, but my stuffing is vegetable based and meant to complement, not be a main portion of the meal.
