    One thing to add, I have taken an awesome, free, craftsy class on pizza dough by Peter Reinhart.  He covers a great deal, adjusting the recipes, and what to look for like shag, stretch and folds, etc etc.  This would be a great place to start, and worth it, even if he now charges $$$.  

    Videos really help with this type of engineering and technique.

    Depending on your winter climate, this is the time of year, where it shines.

    This album sounds straight out of 90's Jam/Lewis Minneapolis, and the songwriting is cracking me up!  
    The song I heard on the radio is funkin' awesome.  There was a great interview with Pete on 60 Minutes recently, seems like a cool guy, humble upbringing, being a small Elvis impersonator in HI.  Amazing talent.
