  • The biggest you can afford.  Start with the XL and soon enough you will be cooking on a Minimax, the best of both worlds.  
  • I too have MAC and Global knives.  I have had them both for some time and prefer the Global.  I might be in the minority, but Global seems to hold an edge better, clean easier, and fit my hand a little better.  Just my opinion though.  
  • Seems perfectly reasonable.  Medicine cabinets can be leading contributors to whole house energy inefficiency.
