  • Started the weekend with garlic and herb chops and a twice baked spud on the egg.  Side salad has the first cut of lettuce from the garden.  Beer is a local brewery’s summer offering.  
  • I cold smoke cheddar the with A-mazn smoker, let it mild out for 2 week in the fridge.  I like to use that on burgers.  I have also done smoked Gouda and I am also a fan of mozzarella.  
  • normally I skip the longer posts as they get a bit wordy, I read every word of this.  Incredible story and like many others incredibly jealous of the adventure and the cook.  
  • Brooks was solid all day long. Impressive winning two in a row.  Secondary story is DJ blowing a lead and really not being much of a factor.

  • I’ve got a pair of ariat boots going on 10 years now, had them re-heeled twice but with a little yearly maintenance the leather looks brand new.  Wear them every day.

  • Made a sausage/onion pizza followed by a pepperoni.  Dialed the temp back now and roasting some corn for a corn salsa with fish tacos tomorrow.

  • One of a kind.  You don’t see acting like this anymore, people get offended if you look at them wrong nowadays.  
  • I do them indirect 350-375. Pull at IT around 150-155.  Have to be quick or they get dry quick.  Breast meat is just like chicken,  usually pull the leg meat and freeze for soup in the winter. I save and freeze the bones to make soup stock as well.
