I bought a 10+ pound pork loin at Costco last month, and was hunkering to try the port loin roast. I read up on the forum to roast direct raised at 350 until 135 and pull. Rubbed with DP Red Eye Express and smoked with cherry. The roast was about 2lbs 8 oz.
Here it was ready to pull:
Potatoes went a bit longer while the roast rested under foil. Then did asparagus and brocoli while roast rested a bit more. Here with garlic artisan bread.
The pork was very tasty. Succulent, juicy, just all around delicious. Everyone loved it.

It was really tasty (did I say that already?)! The DP Red Eye Express was great on it.
I can't claim credit for the kid shots - my wife took those. She is much better than I am at getting good shots of the kids.

He finally got a cold, so he is fussy tonight, but amazingly he started crawling at 5 months. Now at 6 months, he crawls all over the house. Our older kids took several months longer to start crawling. I'm almost afraid of what he might get into as he gets older. :blink:
