Question:
I went to the butcher's shop this afternoon(5:00Est) and picked up some NY Strips. The steaks were vacuum sealed when I got them.
Anyways, I forgot about them in the truck and went to dinner. At 8:00, three hours later, I arrived back home and realized what I had done. Temped the steaks at 60 degrees, checked by laying two on top of each other still in the cryovac and measuring in between the two.
In other words, the temp I got was an external temp.
Should I cook and eat? I say I should, but looking for advice.

I would put them in the fridge and cook them at some point soon (like tomorrow)

Tomorrow is a good day to cook.

I agree with the others, just use common sense. If they look, feel and smell OK I would eat them. I think cryovac can have an odor but the smell of spoiled meat is pretty distinctive. Good luck.

One more vote to eat and enjoy!!
You'll know if they are bad the moment you open them up.
If it smells good...You are good to go!
