I'm trying the foil method today. 3 hours indirect at 225-250 and then 1 hour foiled back then back on for 1 hour indirect while applying sauce. My question is - How many slabs of ribs do you put in one foil pack? Just one or can you put two in the same? Thanks!

Just one slab, meat side down. Some folks put a *tiny* amount of honey and brown sugar in with them.
Don't foil until the bark is set. If the bark scraps off easily when you touch the ribs, wait.

I am a newbie and am doing ribs tomorrow, too. forgive my stupidity, but, what is the "bark" of a rib? How do I know if it is set?

you can put them all in one foil pan if you want. the steam has no idea how many ribs are in there with it
