A beautiful night for butt!

The weather here in the So. Cal. desert just couldn't be nicer tonight. Good, cuz I'm cooking 20 pounds of butt! Kalua style for the So. Cal. Fest on Saturday. I'm going to shred the 2 big ones before we leave home tomorrow, refridgerate overnight and reheat gently in the juices on the egg on Saturday. The small ones I will warm up whole and shred there, just to demonstrate how they were cooked. Trying out the dates I'll be serving too. I am excited but nervous, this is my first fest cook. Also have 9 cans of Spam to smoke!

    I plan on it Molly, on both counts. Notice the naked handle? I filled one of the buckets with water last night and dropped the burning 1/2 in it!

Enjoy yourself, and make time to visit other folks! It will be a wonderful day for you. :) ;) Just sorry I won't be there to try some of that very promising looking pork. :(

    It is pork butt rubbed with Hawaiian sea salt, wrapped in banana leaves and smoked. Usually in a in ground pit. But the Egg does it well.

    Wrapped in banana leaves, smoked in the juices. Have done it just once before and it was eggcetpional! Fiance is a Gator, for sure their going to beat Kentucky this weekend. We will have our SIRIUS radio on.

  • I am having a Luau for about 15 adults and 5 kids this weekend and making kalua pork. It was good to see others are doing the same thing. I would love to know how yours turned out.

    Here is a link to my cook from earlier this summer. It came out so well, that is why I wanted to do it for the Fest.

    Woke up this morning to almost no lump in the egg. First time that has happened! But my temp was still over 200, so took everything off and reloaded. Waiting for it to stabilize again to put them back on.
