    Grilled Asparagus with Garlic Butter

    Serves 4 to 6. Published May 1, 2010. From Cook's Illustrated.

This recipe works equally well on a gas or charcoal grill.
Make sure the fire is medium-hot (see “Gauging Fire Temperature” for guidelines on how to tell).
If using a gas grill, cook the asparagus with the lid up.
Use asparagus that is at least ½ inch thick near the base.
Do not use pencil-thin asparagus; it cannot withstand the heat and will overcook.
Age affects the flavor of asparagus enormously.
For the sweetest taste, look for spears that are bright green and firm, with tightly closed tips.

    Ingredients
3 tablespoons unsalted butter , melted
3 small garlic cloves , minced or pressed through garlic press (about 1 1/2 teaspoons)
1 1/2 pounds thick asparagus spears , ends trimmed (see note)
    1/4 teaspoon table salt
    Ground black pepper
    Vegetable oil for cooking grate
    Instructions

    1. Combine butter and garlic in small bowl.
Brush asparagus with butter mixture, sprinkle with salt, and season with pepper to taste.

    2. When grill is medium-hot, scrape grill grate clean with grill brush.
Dip wad of paper towels in oil; holding wad with tongs, wipe cooking grate.
Grill asparagus, turning once, until just tender and caramelized, 2 to 5 minutes per side (move asparagus as needed to ensure even cooking).
Transfer asparagus to platter and serve.

    Here's one I like.

Clean your asparagus and snap off the hard white end. Marinate them in this marinade for an hour:

    1/4 cup orange juice
    1 Tbsp ginger, fresh grated
    1 Tbsp mustard, coarse ground
    1/2 tsp salt
    3/4 tsp pepper
    2 Tbsp olive oil

Then lay two soaked bbq skewers down, top with asparagus and slices of an orange. Top with two more skewers. Secure both ends with kitchen twine and cover with foil like this:

Grill for 4-5 minutes a side, direct heat.

This is a bit more complicated than my other asparagus recipes but it makes a great presentation when served. The citrus flavor compliments the asparagus.

    Nate,Easy Peasy Delicious recipe.

    INGREDIENTS:

    Procedure:
1 Par Boil 30 stalks that have the tough end cut off.
    2 Cool in ice bath.
3 Wrap 5 or 6 stalks in Prosciutto (De Parma is best)
4 Place on foil direct or indirect @350 dome. Sprinkle with EVOO. Cook till Prosciutto is almost crispy.
5 You can sprinkle with a really good Balsamic Vinegar or just eat them buy themselves. Great served with Pork Loin Chops or my now Famous Pistachio Encrusted French Cut Rack of Lamb or Dizzy Pigs Rack of Lamb Recipe.

Good thread. I just use oil, salt and pepper, maybe a little garlic powder and throw 'em on. Easy and good, but compared to the other stuff I'm seeing here, boring!! Gotta try some of these ideas!! Thanks!

I hate it when I go to the kitchen for food and all I find are ingredients!

    My family like the following:

    1. Steam or blanch asperagus for a couple minutes.

    2. Set asperagus on paper towel to dry.

    3. Wrap 3 0r 4 sprigs of asperagus in paper thin prosutto (spelling) tie in the middle w/ butcher twine.

    4. Brush w/ EVOO and salt and pepper to your liking.

    5. Grill at 350 rolling every miunte or so until prosutto is done to your liking (ours is brown and crispy)

    6. Enjoy!

I snap off the ends, wrap in wonton wrapper and fry to crisp. Sprinkle with fresh grated parmesan. I'm sure this could be adapted for the egg in a CI skillet.

Thanks for the input from all!!! My wife to broil them after seasoning in the oven. Figured why not use the egg!
