I totally agree on the Thermapen - 96 bucks online!!!!!! The plate setter is also a must for smoking

Not sure how much more $$$ you are wanting to spend and if the kids will have any money available to buy some of their own accessories.
Some of the things I would buy again and I, consistently use, if just getting into egg'n is:
Thermopen
Adjustable Rig and Spider (rather than a plate setter)
If no AR & Spider than a Plate Setter
Stoker or DigiQ2
Thirdeye's ThirdHand Grid Lift, Wiggle Rods, Micro Adjuster and ThirdFinger
Either buy or make a wiggle rod
Mot likely came with your egg purchase
BGE ash tool
A bag of lump

On sale for about $86 at the moment. Might want to move fast on it if the sale ends soon.

Thermapen from mollyshark - cheap and you are supporting a fellow egghead (assuming you have become one too!)
BGE supplies must haves in my opinion
Platesetter
Ash tool
Pizza Stone (just drop the $50 already cause you will regret every day you don't have it like I did (1 year!))
Cast iron grate (I have CI for the small I use on my spider and on my small)
And depending where you live - a ventilated cover
Non-BGE supplied must haves:
Adjustable rig (ceramic grill store)
rig extender (ceramic grill store)
Lawn Ranger or Third Eye's wiggle rod (not sure how I last so long without it)
Chimney Cap to fit over daisy wheel during rain and such
