I was wondering if anybody had ever tried the T-rex method on a beef tenderloin. I picked up a small cryovac'ed one at Costco, and was thinking of trying it, but kind of paranoid about experimenting.[p]Anybody have experience with this?

WJS,
I only cook steak that was always no matter what the cut.I suggest you add some oak as tenderloin flavors oh so fine.

I sear mine at a high temp, take off BGE, add more lump to get temp down and cook indirect until I get to medium.[p]CWM
