Yesterday's shoe leather on the BGE turned out fairly well. At any rate it was edible! Husband did the chuck roast for about four hours and it did produce a pulled beef kind of thing.[p]After we ate husband did a pretty productive experiment for him. Instead of shutting down the lump charcoal he waited to see how long the BGE would maintain the temperature he wanted. Lasted for quite a long time and now he feels he has learned enough about controlling temperatures to do a truly long and slow.[p]Many thanks for everyone's replies.[p]Chris in Pearland, TX where TS Ivan is threatening us

    Spring Chicken,[p]We ended up doing our shoeleather in one of those clay roasters. Took about 4 hrs and came out pretty good.
