Why this method versus my butcher cutting them in 1/2 and making it easier to cut them up after they are cooked?

I think the only reason is the way it looks, i don't think there is any advantage of one over the other.

Personally, I just like butchering the chicken myself.

Because it protects more of the breast meat that easily overcooks.

Round here Costco whole chickens are .99 a pound. Parts are always more. I buy whole and part or spatchcock as desired. Never pay high dollar price. Backs and wing tips make excellent stock.

Probably not much, but splitting the chicken down the back and cooking it one piece helps to retain the juices and makes a wonderful presentation
