Big trouble on the home front. I have two butts doing their thing on the egg. At 300am they were perfect. At 645am the fire had "left the building" with the temp all the way down (egg warm at best). The internals on both butts were 150plus. I've restarted the fire and had them back on by 0710am (internals still 150plus). I started the temp a bit hot and will let it work its way back down. So...does anyone have any insight into any health issues that I should be concerned with. Without question, I eat'em both. Its my guests that I'm concerned about. Thanks for any help you can offer.
