Just did a porchetta last night with my rub. It is about to come off, 23lbs lbs. it is a whole shoulder butterflied and bones removed and tied into a roast with the skin covering. I will hopefully figure out how to post pics soon, been really busy. I'll let you know how the roast turns out, hopefully before you try the pork lion.
