What's Your Favorite Wing Recipe

Well, it's the end of the week and I for one am READY for Friday night happy hour! Often, Mr. Hyde does pizzas on Friday, since he has a 10-hr/day Mon-Thurs work schedule and is home on Friday and can do the prep. Unfortunately (or fortunately) he's working overtime today so instead, I thought we do a batch of wings instead. They're quick, tasty and excellent happy hour fare![p]So, since there are a lot of new names on the board lately, I thought I'd take a poll to see what everybody's favorite recipe for chicken wings is...and maybe get an idea for what I'd like to do to mine tonight![p]Here's a pic of some we did awhile back...[p]wings-after-sauce.jpg>Tonia

    my family really likes the mandarin wings i did at waldorf 03. . ..[p]<img src=http://img73.photobucket.com/albums/v221/madmax521/mandarin_wings.jpg>[p]MANDARIN WINGS[p]5 pounds of wings split
    2 jars hosin sauce
    1 jar duck sauce
    1 jar sweet and sour sauce
    1/2 cup soy sauce
    about a tablespoon of sesame oil
    chinese chile oil to taste
    ginger to taste
    bunch of scalions fine chopped
    mix it all up, let the wings marinade as long as you want[p]i originally heated up the egg to about 300 degrees dome temp, but found that a little too hot. . .ended up doing them for about 1 1/2 hours at around 230 dome temp, and they came out excellent. . .except for a couple partially charred from the initial high temp, they came out great, just tossed them around on the grate a couple of times to make sure they stayed even, and they were most excellent.

  • QBabe,[p]My favorite recipe for Buffalo Chicken Wings is from America's Test Kitchen. I made them on Memorial Day and they were a big hit. Of course, instead of frying the wings I smoked/grilled them on my BGE. [p]I got the recipe from a google search, but can't seem to find it now or I'd post it. [p]Bill
  • QBabe, did some (a lot) last night and my Mom loved em (she's spending a few days with us for a change of scenery). At her age and her weight, health, I might have to hold off eggin when she is around , she puts it away I tell ya. We wash, dry em and olive oil em, and use that tsumini spin stuff, (no idea if I spelled that right, but I did run accross the original meaning for the word a while back-interesting),300 bout an hour or more, direct on raised grid, turning often to brown a lot and still not burn em. Then we have enough Texas Pete to float a boat but let everybody float their own wings themselves (personally , I just like a good dip in there). Bout always have rolls , slaw and baked tater with it...goood stuff...can't be beat

  • QBabe,[p]Oil split wings, dust with Penzeys Barbecue of the Americas, one hour @ 325, raised grid. Heat up Franks hot sauce with some butter - 3 to 1 (whatever you need to cover'em). Roll'em round until nice and covered.
