Off topic - (sort of) ONION RINGS

Howdy all - Got a buddy coming in for a visit tonight and I'm going to egg us the biggest juiciest steaks I can find. Thought some onion rings might be nice, we've got some good sweet vidalias I could use, but I've never done them personally. I tend to prefer the battered kind but am open to suggestions. Any help? Thanks in advance.

    Cornbread Willy,[p]Toss the rings in oil with a little salt and pepper; put 'em in the grill topper like the squash below. Garnish those sectors of cow with 'em.[p]Ken

    [ul][li]Emeril's Onion Rings[/ul]
  • here is my wife's favorite:[p]5 med. white onions - sliced
    1 cup milk
    3 eggs - beaten
    salt - to taste
    2 cups powdered pancake mix
    parsley sprigs - for garnish[p]-Separate onions into rings.
    -Combine milk, eggs and salt to taste in mixing bowl.
    -Soak onion rings in mixture 30 minutes.
    -Place pancake mix in shallow bowl.
    -Remove onion rings from milk mixture then dip in pancake mix.
    -Deep-fry rings in 375 degree oil until golden brown.
    -Drain fried onion rings on paper towels.
    -Pack fried onion rings loosely, without pressing, into 8" X 4" loaf pan.
    -Bake in a 400 degree oven for 10-15 minutes.[p]

    I do them about the same, less baking, and add a little sugar to the batter. They are really pretty good.

    It also sets them into a "loaf" shape as well as finishing them off. That way you get a 'loaf" of onion rings that you can cut or break off hunks. [p]Like I said - the wife loves them this way. Myself? I usually use a tempura batter from the store with vidalias. [p]We also disagree on what you put on 'em.
