What is the best process\contraption for freezing meat that has been opened? Suggestions? Are those vacuum sealable zip-loc bags worth anything?

A vac pac machines (ie. Foodsaver) are priceless. You can pack almost anything and freeze without a freezer burn issue. Some things can last years.

I think Ziplock puts them out.

I would invest in a Food Vac. I use mine all the time. The ziplock bags aren't near as heavy and the freezer life won't be as long as with a Food Vac. Just get an inexpesive entry level one. It will pay for itself in the long run.

I second the recommendation of a Food Saver. I bought one of the Ziplock vacuum sealers and it worked ok but I took it out yesterday and it will not start at all. Checked the batteries and they are good but I'm getting nothing when I try to turn it on. The FoodSaver has been very reliable and also it is good for creating seals secure enough to be able to dump the bag in boiling water. I would not try that with the Ziplock bags.
