A good ol' beef roast to finish the year

A sleigh ride and then dinner.
Clay whispering,"ok here's the deal, you behave and be a good boy, don't freak out the Missus and I'll give you alfalfa when were done."
Horse, "It's a deal."
We're ridin in a cutter thats 120 years old.
The beef, a nice little chunk of Angus ribeye roast.
Poolish starter for rustic bread. The goal was to serve fresh from the egg and still warm rustic bread with the rib roast so I had both eggs going, smoker egg and baker egg. :P Baked bean side dish was already made day before so easy re-heat, DianaQ was makin a killer garden salad with Wisconsin blue cheese, love that stuff.
Simple cook for the beef, Dizzy Pig 'Raising the Steaks' rub with extra salt, indirect setup with plate setter, egg at 300° dome, applewood for smoke, when the meat hit 118 internal changed the setup to direct and reversed seared until beef hit 125 internal.
Rested and sliced.
We was stuffed but I made room for after dinner martini's. :silly:

that is just cool man, I have to bail on the pulled beef, my wife informed me that several of our guests will not eat it, bummed out to say the least, I may make it for Sunday's football instead, thanks for all the help & happy new year, Marc

Zips, I made a pile of that stuff for Christmas night, had plenty leftover, and my kids kept eating the stuff for lunch the next several days 'cause they liked it so much.

That's no mule. Ruck is a retired trotter race horse. Yup, Ruck behaved and I feed him alfalfa afterwards. He gets alfalfa anyway for energy to keep him warm in winter. Think of 'high test' hay.

Don't know. I'll guess 2 hours at 300°-325°.
I always use a meat probe, this way I know what's going on regardless of time.
Maybe others can help you better.

Very nice pics! That was certainly a great way to bring in the new year! Hard to believe the sleigh is that old.
Beautiful rib roast too! Just had one for Christmas, but this post makes me want another one.
