New Egger and first rib cook pictures

Been lurking (researching and learning) for a while and decided to finally put a post up. We purchased a XL on the 11th of Dec and did ribs for the first cook, a Turkey for Christmas, with a couple of burgers and chicken as well. We have used it 5-6 times already and haven't had it a month yet. I love the way it cooks and it is super easy to use and regulate the temps. I have had Weber grills, water smokers, and an offset in the past. I have already started to justify a medium to go with the XL.

On at 4:45 pm
DFMT setting, forgot to get one of the bottom vent - it was only about 3/8" to 1/2"
Dome temp, grate was 250-260 and I never had to touch it once I was happy with the stability
Pulled at 9 pm, sauced the last hour with Sweet Baby Rays.

the ribs look awesome but I am amazed at that clean egg. I bought mine used so I never saw one white on the inside!

Nice job! Baby backs are my very favorite thing to cook on the egg. Looks like you nailed it.
If you want them to glisten a little bit, mix 2/3 Sweet Baby Rays to 1/3 honey. Makes guests salivate a little more. It doesn't change the taste that much, and it makes them a little stickier.

DGb - I forgot about that. I used to do that for competition turn ins, but don't normally do it at home. I did find if you mix the honey with the SBR's Raspberry Chipolte it would take what little bit of heat that was there out.

The XL is great for ribs. I think your on the right track. A medium is a great combo with the XL.

As a couple have guessed, I did competition BBQ for a couple of years; mainly at the Smokin' Blues in Hammond, Louisiana when we still lived over there. I was a team member on the pro side for 3 yrs, then decided to try "backyard" and use the event as a family gathering.
I sent 2 racks with my wife tonight for her to share at work. She is a RN at Cook Children's in Fort Worth and had to work tonight. These could have went a little longer, but I wanted to make sure she could bring them with her - sorry no pictures of these. -

XL is outstanding - I think it is a law that you have to have something smaller to geaux with the XL. -
