Pulled pork Cooking - Question

I have two 9 pounders going - currently in plateau. I expect that it will finish about 1 to 2 PM; dinner will be about 7PM. I have two choices: let it stand insulated and pull right before serving, or pull at some point and leave in serving dish (warming I suppose in oven) until serving. The question:

How long is too long to let stand insulated before pulling? It would seem pulling right before serving would be best if possible.
