Got a couple of 1" chops in the freezer that need to get cooked. Can I brine and thaw them at the same time? How much water, salt, and sugar?

Never brined while it was frozen. I don't think it would work because the water isn't allowed to permeate the meat. The whole osmosis thing or whatever it is. Go here for info on brining.

FYI, i normally thaw the chops, brine over night for about 8 hrs, then in the morning rinse the chops then throw in a marinate while at work. In the brine solution you can add whatever you want. I normally add honey, some allspice, fresh pepper, etc. I think i use 4 cups of water and 1/4cup kosher salt. whatever it is it's in the link. hth. best chops ever. -
Put them in a ziplock with the cold brine, they will thaw rapidly and the brine will go to work. -RP
