Forgot I have to do pulled pork samiches tomorrow for the father in law. Can I get to 200 degrees internal in 7 to 10 hours cooking at 300 with say a 7 or 8lb butt? I have heard of the turbo butt and can't find anything when searching. So is 300 to hot I think I will be Ok with 300 But not sure? I am going to do regular platesetter with drip pan but never done a fast one before i have allways done a 12 to 15 hours. Thanks for the help.

Yes, go ahead and get the heat up to 300*. If you need to, you can wrap the butt at the end and get it to finish quicker.

Follow what CG said. As you kreep up on time that it needs to be done you can evaluate the temp and call the shot on when to foil it or crank up the temp any more. It will turn out good. No worries.

Thanks for the help guy's, I am going to put it on at 6am; hopefully pull it at 4pm let it rest till 6 or 6:30pm. I was kind of leary about it but I guess I just need reasurance sometimes.

If it is holding in the plateau too long, go ahead and bump it up a bit higher (350*) if you need to. You may just have a bit more internal fat to pull out that did not render completely. Butts are forgiving. Just get it to 200*

You should be okay. My first butt went down in I believe 7 hours - I hadn't calibarated the dome therm. and it was 75 degrees low. So at a dome 225 it was really 300. Butt was great.
