Prepped like Baby Backs
Cooked like baby backs, 5hrs indirect at 250, no foiling.
They were fantastic, highly recommended for beef lovers, and Buzzie is going to love the bones.

What did you marinate them in and for how long? Also what temp cook and length? Thanks. Have some in freezer just waiting to be cooked

I really didn't marinate them, I did the yellow mustard and some Dizzy Dust the night before. 270 dome indirect for almost exactly 5 hrs. I pulled them at 200 degrees internal. I spritzed them a few times with Apple juice and cider vinegar mixture and used some apple chunks for smoke. I started them bone side down and rotated them on the grid occasional and flipped them twice.
I had a few beers (Sam Adams Boston Lager) during the last two hrs of the cook. Use whatever brand you like.
You are going to love them, I think. -

quick question. Did you hold the Sam Adams in your right hand or left? I'm worried about proper balance and rib feng shui.

Facing East west left hand with pinky out. North South, right had with thumb up.
