Mini Goes Camping

Jersey Girl and I are just back from a week of camping in upstate new York. We took the Mini and used it for dinner every night but the first Tuesday. (There is a camp-wide covered dish dinner that night and we'd have had trouble if we didn't make the curried rice dish we're contributed for the last 20+ years.) Here's Mini on her rock.
Wednesday night I cooked a T-bone for two.
Thursday it was kielbasa. I forgot the slits on the back to keep it from curling. It was good anyway.
Marshmallows for dessert.
Salisbury steaks on Friday. Wegmans irradiated 80/20 beef. DP Cow Lick rub. Carnivore Sweet BBQ sauce. Cooked to 135º internal. Delicious!
Pizza on Saturday. Just like at home but smaller, but we made five to compensate.
I cheated and used store-bought crusts. They just fit the 8-1/2" pizza stone and cooked up nicely.
Marinated drumsticks on Sunday.
And a nice rib steak for our last night in camp. I forgot to take a photo before I took it off the Egg.
We're already thinking about the menu for next year.

Looks like fun. The night with 5 pizzas must have been a blast.

Doug,
Great looking cooks. That Mini is a real work horse!
Almost makes me want to start camping again! NOT ! :woohoo:
Too old and decrepid to get off the ground.  -
WOW, I'm green with envy, . . well

doesn't get much better. That's a great

Nice Job Doug, everything looks GREAT!
I noticed you have the mini Woo and a raised grid- you're not fooling around!!!
I also saw by the gasket (and the bolts on the raised grid) that this is new, so good for you drivin' that little guy like you been doing it all along!
FWIW- The steaks you can cook with the grate in the low position. Otherwise I go raised on everything too.
I have the stones, but haven't tried pizza on the mini yet- you got me thinking now..... -
I've been thinking about one of them cause it looks like with the smaller cooks it may fit nicely into a diet plan. Needless to say i have gained a few Eggpounds in the last decade...........
what part of Joysee you from? what exit? -
Great looking cooks for the camp. It is really bad when you have to rough it.
I need to get a pizza stone for the mini.
