Tonight I'm looking to egg some Top Sirloin (steaks) I bought at Costco this weekend past. I have four steaks (pieces) weighing various amounts - this is not a roast.
I went back and read a few ancient post on sirloin and here's what I think I'll do:
-Use Montreal Steak seasoning (family isn't into fancy marinades)
-High heat sear, dome open(?) and cook to desired temp (125 degrees)
-Rest for 5 to 10 minutes
-Slice across the grain
-Serve sliced sirloin with baked tater and side vege (TBD)or ice berg wedge w/blue cheese dressing.
Thoughts?

Sounds good Bill...we like ours with sauteed mushrooms & onions...yummy

I cook sirloin as I would ribeye or any other steak.
In my opinion sirloin has the most flavor of any steak. -
Kim,
Yes, yes, yes! onions and mushroom!! Unfortunately Costco didn't have any Vidalia onions (neither did Giant) so I picked up a bag of Walla Walla sweet onions.
Thanks! -
Great thanks for the input.

That will sure work.
Another option is a reverse sear. This involves cooking it over a normal fire until the internal is 100°, then pulling it off to rest. Meanwhile, ramp up the fire, and then toss the steak back on for a couple of turns until the internal is where you want it.Happy Trails~thirdeye~Barbecue is not rocket surgery -
I don't think you can go wrong with that plan. Sounds good!

Wife and No. 2 son bailed on me so it's No. 1 son and me - now I can break in the new nomex on the mini!!! :woohoo:
PS: add sauteed onions to the menu, forgot to pick up mushrooms on my return trip back from 9 holes :( -
FWIW, I like course cracked black pepper and kosher salt for seasoning. Not a huge fan of Montreal and I think the s&p just taste better.
I also am a big fan of the Costco butcher shop and the 4 pack of top sirloin steaks. Dollar for dollar, one man's opinion, if I am buying, I am buying the top sirloin steaks from Costco.
Enjoy those!
