Two 12.5 briskets

Last Sat I was forced to smoke/cook 2 12.5 lb briskets on the Egg. I was going to smoke them on my offset but the constant downpour preventd that. I used a grill extender and a plate setter. The meat still overlapped but there was nothing I could do. I was going to serve the meat on Sunday so I cooked them at 250 - 275 for 15 hours and heated the meat in a roaster for 2 hrs. on Sunday. Sunday I smoked 4 7 lb racks of spare ribs on theoffset. 4 hours @275. They were great. Everything was great. Love the Egg. I didn't think I could fit mall of the ribs on the Egg is the reason I used the offset. Made everyone happy. It was my Mom's 82nd birthday.
