I have been brining this 17 pound bird since Wed. (soy, fresh ginger,garlic,bay leaves, honey ect.) I usually go direct but she needed a little more support. Turkey setter,drip pan & some of the brine, guava wood. I am not a big gravy fan but would it be o.k. to make some, since I used the brine? suggestions?

Susan, I asked LC. She said taste the dripping for salt levels. She is thinking it may be toooo salty for making gravy depending how much salt was in the brine. Certainly ok to use it for gravy, but before you spend the time making it, taste the drippings. that does not look like one of the "twins" What happened LOL and I think I would pass on the gravy. you might get by with diluting it with a little white wine and boxed broth, just use just a cup or so for the smoke flavor?? If you are not a gravy person then..... might not be worth the effort. Julie

and did you have anything under the pan the bread was in? if you raise it up a little off the plate setter it might not burn as bad. top looked great!

Must be something in the air today for turkey. I found a package of smoked turkey we had frozen from the last Spring Chicken cook. Had a sandwich for lunch and it was delicious. Yours looks great. Let us know when it is time for sammiches....Judy
