As a child I remember my mother ringing a neck or two in our back yard. I don't remember that fried chicken or chicken and dumplins having cooked blood close to the bone like now. I am not a picky eater but I hate that cooked blood next to the bone in chicken you get at grocery stores now. Is there someone that sells quality chicken? Or some way to get rid of that?

try a kosher chicken.. i get empire brand at wegman's here in PA. if you nutz around empires site you can learn a lot about 'koshering' . i find they do not keep well and cook the same day as purchase, BUT little or no blood, just some faintly pink water not the slime you find in the others. and the concistency is wonderful. firm , the joints are stiff not floppy .. worth a try if you can find one

Most likely what you are seeing is the result of weak bones leaking marrow. The big producers have adjusted the chickens feed to a minimum, and so the bones aren't as strong as they used to be. Look for a local producer. If there is a farmer's market near you, try finding chicken there. It may say "no-chemicals," or "free-range." It will be more expensive, but the taste is significantly better. Curiously, they also seem to be less fatty.
Some markets carry organic, but that tends to be quite expensive. -
chickens are grown much faster ttoday than they were "back then", and their bones are not mature. it's not so much blood as it is marrow leaching through the joints.

Ron, I'm just like you about the blood in chicken. I only eat "Smart Chicken". When processing they use pure air chill technology in place of water immersion. They are also certified Organic and certified Humane. It's the best tasting chicken I've ever had. I'm sure if you google "Smart Chicken" you can find a store that carries it near you.

they really are.. i am lucky here as there is a free range turkey farm about 20 minutes away. the pasture is right behind the store... i talk to them ...
stuff like "looking forward to seeing you on my table next week" :laugh: -
