<p />Had a little accident over the weekend. My friend decided to cook the Mahi Mahi. Old hinge on BGE same old result.
Well, gave me a chance to fire up the mini for the FB season. Had Cowboy grillers tonight and turned out great. Can't cook for more than 6 but was great for the 3 of us.[p]CWM

DK, Accident was my guest decided to cook and forced the old band down on my BGE. Top lay on the deck but no broken pieces. So I cooked on the mini tonight.
That would be cowboy grillers. Take a boneless, skinless chicken breast and flatten out. Add peppers, the hotter the better, add cheese and wrap in bacon. Add your personal favortie rub. If you wrap tight enough, the cheese won't melt threw.
Cook at 400 for 20 minutes or longer to get chicken done and enjoy.[p]CWM
