So I woke up at 0330 this morning and lit the egg. Got 2 5.5 lb butts on at 0430 at 250 degrees. It is now 1000 at night and they are at about 187 degrees. Looks like I will not be eating these butts tonight. I just opened up the draft a bit to speed up the last couple degrees. I think I am going to go to bed and keep the remote thermometer thing on the night stand so that it can wake me up when they hit 200.
In the meantime I whipped up a new flavor BBQ sauce...Pineapple habenaro. I hope that turns out well.

It seems like I have to start that cook about 4am in order to be ready for dinner.
Let us know how the sauce turns out.

I cook mine at around 220 - 230 however I put them on in the evening around 8 or 9 pm if i want them for dinner. My butts usually run about 7 pounds
