First ABTs... suggestions?
Salty Dog
Posts: 89
I'm going to try my first ABTs tomorrow. It looks like the essentials are the peppers, the cream cheese and the bacon. I'm thinking that a tiny bit of chopped red onion and some left over pulled pork complete the agenda. Other thoughts?

A good rub to sprinkle on them after assembled.
ABT's are a personal taste kind of thingy. Make them as you want. If you like them keep making them that way. If you don't change the stuffing. -
The pulled pork is great. ABT's are what ever you can come up with, Kinda like a potato. Another favorite is ham or Canadian bacon or little Smokie Sausages.
-
Pulled pork and cream cheese inside is an excellent combo! (We like taco meat very much, too).
My A #1 bit of advice...don't forget to wear gloves when removing the seeds and membranes!!! :S

I made a batch today for a little family gathering. I would suggest a small chunk of maple wood for some smoke. Everyone here Thought they were great.

-
It wasn't my hands that were a problem but my sinuses. You would think I was snorting the seeds. :S
-
WUSSS!! Be brave don't wear gloves.. Just be careful where you scratch hahahahaha
-
Salty Dog,
I do mine with PP and usually mix shredded cheese in the cream cheese.

Thanks for the great ideas. I think I'll add a little cheddar and taco meat to a couple of 'em. Full report tomorrow (or later, depending on beer consumption....) :woohoo:
 -
Since this is your first batch why not try a variety of inserts: little smokey's, spam, shrimp, pulled pork, cheese, pineapple, etc, whatever your immagination can conjur up. Then see which ones are most popular at your house.
Also, I like to use at least two toothpicks to hold the bacon on (although it isn't always necessary to pin the bacon). Once they are done you can easily cut between the toothpicks thereby making them easier to eat and without the risk of squirting cream cheese on the floor.
I think you are going to enjoy this snack very much.

You might try mixing a little jelly with the cream cheese. I thought it sounded terrible but it is acutally quite good.

Have a GREAT day!

WEAR LATEX GLOVES!!!!
You can take my word for it or not.... others may tell you differently... BUT... I did about two dozen of these one year and didn't wear gloves when cleaning and deveining the peppers... my hands burned for two days... no exaggeration.
You've been duly warned.

Jalapeno jelly also gives them a sweet kick.
-
Sorry Celtic...
It has nothing to do with being a "WUSS"... I did a large quantity of these and preparing the peppers DID cause my hands to burn for two days... it was very unfomfortable.
There is just no reason not to wear gloves while doing this. -
Don't need to be dumb but what is ABT?

"Atomic Buffalo Turd"
The reference, as best I can tell, is historic... it's been around forever.
Cream cheese stuffed Jalapeno.. usually a bit of pulled pork or other addition added as well as cream cheese. Wrapped in bacon and egged until bacon is crispy.
They are outstanding! -
JOKE!!!!
-
There is no set way to make them. I don't like cream cheese and use Munster, sausage sometimes shrimp. Since the pepper needs to cook the onion will cook as well. I do precook my sausage to get some of the grease off. The will be great!

-
Celtic,
I assumed you were joking... however for someone not having made them before I just wanted to be sure they understood you can experience some unpleasant side effects. I'm sure it depends on sensitivity, the particular peppers, the quantity prepared, and a variety of other factors... but man, it was an unhappy experience for my hands!... I'm serious... TWO DAYS.
They were so good though! Our kids still talk about them!
Now you all are making me want to do some tomorrow! -
I have a simple question, after you get rid of the seeds and what not from the inside of the pepper, does the pepper still have a hot taste to it? Dentyne burns my mouth, but ABT's look so goooodddd that I would like to try them...
-
You can use other peppers besides the Jalapeno's these were some argentine peppers that are not hot at all but have the jalapeno taste. They are much bigger and you can get more stuffing in them. The Jalapeno's are not too hot if you get all the seeds and membrain out of them.

-
The Capsaicin (heat) comes from the interior membrane which then coats the seeds. To reduce heat, remove BOTH seeds and membranes. It will still be somewhat hot, but less so.

Anna....Try them!! There is a little bit of heat, but not bad at all!! Just get all the membrane out! (I am a heat sissy, too....) ABT's, with the cream cheese and bacon...ohh...just too wonderful to resist!! Honest.
An absolute MUST do for you.
-
Thanks Michelle, I am glad I am not the only heat sissy... Maybe I will try one at the next eggfest nearby...
-
Anna did you get that e-mail?
-
Anna...I am a heat sissy, yes, but ABT's are simply irresistable!! Dont wait for a fest! :( You will simply be depriving yourself!
-
Nope, not yet...
-
I will try again
-
I sent myself a test email and I still have not gotten it either... are you using agoff1atcomcastdotnet?
-
