Avoid Chilean seabass as it is overfished. Most are caught using bottom longlines, which lead to bycatch of seabirds, most notably endangered albatross.

Exactly... Chilean Sea Bass is actually endagered and should not be eaten... (sorry if this sounds "preachy")...

It was brushed w/toasted sesame oil and sprinkled w/onion and garlic granules from Penzy's and salt and pepper. I then mixed up some soysauce with honey and Korean hot bean paste or also Known as hot pepper paste(Aisan Markets). You could also use Miso. This we used as the sauce on the plate. This also worked very w/artic char and scottish salmon

Thanks for the information. I wasn't aware of this with the Chilean Seabass. I try to avoid consuming anything that is being overfished. I will substitute another fish for this recipe.
