new to this forum. What is the opinion on brining your brisket, if so how long?. Any receipes other than the kosher salt/brown sugar.

    Pickling salt works better than course kosher salt. It will dissolve in cold water, since it is ground finer. Can't help you on brining a brisket. I only brine pork and poultry.

    I have brined a brisket before, used this receipe.
    3 bay leaves
    4 cup water
    3 cup cider vinegar
    1/2 cup kosher salt
    1/3 cup packed brown sugar
    2 tbsp whole black peppercorns
    Boil ingred. let cool then brine. Have also used this brine on tri tip.

    i have used both and let the brisket set in the brine for several days, in the frig don't know the fancy words for what it does but it breaks down the muscle? strands can 't remeber what i read except it works
