Perfect Portion Sirloin

These were from Wegmans two sirloins just under a pound total and about 2 inches thick. My first thought was to TRex them. Fired up the egg it quickly hit 700 but the wife wasn't ready to eat so I choked it down to 500. The Eggshot:
