2nd Pizza Tip for today.

One problem people have is sometimes the center of their pizza is a little soggy. Now to keep this from happening all you have to do is when applying the sauce keep the sauce to a min in the center. Put more on the way to the edges.

If you take a cross section of your pizza it will slant to the center of the Pie. When it bakes this causes some of the sauce to move towards the center. If you already have some in the center than you create a puddle. You need to put some in the center and spoon it away. If you leave it dry ..you get a barrier and the sauce has a harder time moving towards the center. So ..sauce and push away from the middle.
