Friends coming so I started with some Pork Shanks seared them with EVOO and then added the Chipotle Sauce and Red Wine to the pot.... foiled and on to the egg....indirect, 290 F Dome...at 120 F internal removed foil...added Cherry Wood Chips...and pulled at 160 F.......this was the first batch...cooked two...
.....added hot Pico de Gallo......
............. & Raspberry Chipotle
.... & Mashed Potatoes all these of my wife's kitchen.........
...tender....tender....tender & full of flavour....
..all stripped to the bone........
....to finish it off....stabbed Peanut Butter Cake ... :evil:... one of my friends doing......
.........and Strawberry Almond Cake...
It was an evening to remember....
.....added hot Pico de Gallo......
............. & Raspberry Chipotle

You can't cut that strawberry almond cake - it's a work of art.
Tell me a little more about the pork shanks.
You said you seared first - did you just turn them a few times to brown them?
Is that the pot that you added the chipolte sauce and red wine to? Did you roll them around in the sauce and then foil the whole pot with them standing up?
Sorry for all the questions. They look great. The bone is slick clean.

I was just lucky to get in time to the strabberry almond cake to take a pic, my delicate friends and their lovely wives.. :P polished the plate...notice how they stabbed the poor peanut butter one.. :evil: ..The shanks I just rolled them briefly on the skillet with EVOO to get them lightly browned... Set the egg indirect added the chipotle sauce & red wine to the pot (actually cooked two full pots) on the photo...and then foiled the whole pot...poor choco (my labrador)...no meat left :woohoo: -

you also add some serrano chiles to your taste....EVOO, white wine vinegar, and S & P. ...

Strongly recommend it....in the rush to eat it....didn't get a chance to present it properly.....shank standing...surrunded by the mash potato and then the raspberry chipotle & pico de gallo on top... -
