Friends coming so I started with some Pork Shanks seared them with EVOO and then added the Chipotle Sauce and Red Wine to the pot.... foiled and on to the egg....indirect, 290 F Dome...at 120 F internal removed foil...added Cherry Wood Chips...and pulled at 160 F.......this was the first batch...cooked two...
