Doing some pulled pork and lost my fire in the wee hours of the morning.
Went to a move so I put it on late last night. Had it up and running and stabalized at 230* and went to bed at Midnight. Got up at 4am or so and peaked and it was at 200*
Woke up at 7:30 and she was out. Had cooled to about 75* Meat was still at 96*
Is it ok to go on with this meat?

Sam, the rule is no more than 4 hours between 40 and 140, so you need to figure out when the surface temp on the butts was in that window. -RP

Not with those temps. Toss it for safety.

Next time try 250 dome, it's a lot easier to maintain. sorry bout your loss.

It was a tough decison. Thanks for all the input. I was very nervous and will likely not do it again. Way to much stress. I did the math and felt that the window was probably ok and went on with it.
It was delicious! -
If you are that stressed buy a guru....don't give up the pulled pork.
I think you made the right call....
