Question about picnic vs butt

Is there any difference in the way to cook a picnic oppossed to a butt. I've always gotten butts when I do a cook but I have a friend that wants me to do a cook for them and they got a picnic. From what I can remember they are both part of the shoulder , the picnic is a little more "hammy" Thanks for any info. Brett

I have cooked both and have treated them exactly the same.
The picnics I generally see come with skin on, so you need to decide whether to cook it that way or remove the skin.
I saw lots of picnics cooked in Tennessee with the skin on and a few bites of the crisp skin is excellent, but not as good as the bark on the meat, IMHO. -
I always remove the skin and the fat layer below the skin. Light coat of mustard and rub. After that, cook the same. I pull at 192F and foil. When it comes time to pull apart, there will be more sinew and old veins than a butt, but the meat of the different muscles will have different color and will taste better in my opinion. The extra stuff you need to remove is right inside where the bones come out. HTH.

The picnic is a great cook but as the others have said, I remove the skin and most of the fat. -RP

Hey Randy, are you still planning on coming up Sat.? I'm almost 100% sure I'll get there and hopefully Gina will as well.
