I am making Cat's Baby Back's for the first time. We finally got some juniper berries, but no black mustard seeds. We plan on using yellow instead. ANy experience using this as a substitute?[p]Fritz

Ooooooh Boy! My favorite.
Yellow mustard seeds are not exactly what the artist had in mind, but I have substituted yellow twice, and ended up licking my chops....just like I did when using the black.[p]Go for it!! You will not be disappointed.[p]NB

I believe King-O-Coals used yellow mustard seeds and thought the results were fine. They're a little less spicy than the black. Also larger, so make sure you crush them up well.[p]Cathy

I have been dying to try the ribs, but am holding out until after professional training at Eggfest.[p]Tonight is steak experimentation. I have one filet, one t-bone, one strip. All prime. All marinating a la lemon/soy/oil as we speak.

My kind of experimentation!!
Prime egged steaks! That marinade is great...not that those steaks need anything but pepper...but I am sure they will be great. The marinade is subtle, and doesn't overpower the meat at all.[p]See you at the fest.

Nu-Guy,[p]I can buy them around the corner...Manhattan has its drawbacks, but finding esoteric ingredients is easy. ;-}[p]I did notice recently that Penzey doesn't carry the black seeds anymore. A good mail-order source (for all kinds of spices) is Adriana's Caravan - 800-316-0820. [p]Also see the link below; I haven't ordered from this outfit, just turned it up in an Alta Vista search.[p]Cathy[p]

I found them at a Latino Market up the Street.
If you have any Latino Markets, you might check there.
If you can't find them, I think you should still make them with the yellow seeds!! That recipe is worth trying either way, and like Cat said, not a huge difference...the black are a little spicier.[p]Have fun
