8 lb brisket
Cooked at 225 with the help of a BBQ guru system. 15.5 hours (2hr/lb). I took it off at 190 internal and wrapped in saran wrap for 20 minutes. I did not add any liquids during the wrap.
Now on to my St. Louis ribs next...

Oh wow!! All I can say is that's amazing. I bet the brisket just melts in your mouth.

Good idea in the ABT's, I've tried pulled pork before but now I will try the brisket.

I've done 2 of them so far. My wife loves em. Briskets and pot roasts are the only way I can get to cook beef any more.
