no you forgot the christmas eve.... and for me that has always been the time to celebrate!! christmas is when the family gets together in a more formal manner and i am not a formal kind of guy :unsure:

We usually do a pheasant on christmas eve. Haven't decided christmas.

I went to the butcher and pre-ordered a full 'small' (7 bone) prime rib. The butcher is going to trim the fat, loosen the bones, then tie it all together. The bones should pull out nice and easy after I remove the roast from the EGG, then I'll slice it down as if it were a boneless prime rib from the get go. I never had it prepped this way before so it should be interesting.

I'm usually unusual. :huh: That is, I don't often go with the flow but with what I want. This Christmas I will cook duck one day and lamb another. I'm thinking rack of lamb...lamb prime rib??? :ohmy: :silly: -
Making that relief cut on the bones is a good idea, plus you can add seasoning between them and the roast...but you might want to mention to the butcher that you are cooking this on an Egg, and to not trim the fat too close. One of the reasons that some restaurant primes are so good is that they the whole section and cooked with the fat cap intact.Happy Trails~thirdeye~Barbecue is not rocket surgery
