super balls - turkey leftovers

follow along with the rtd test kitchen as we test a new developmental recipe
ok kids... here's the view after 1:36 at around 280 eggdome temp
not done yet at 2:20. i bumped it up to 300

check this out! i could not be happier. this could not have come out better.
i give you
SUPER BALLS!
they are done when they split. these were actually 205 degrees internal at the center
very crunchy on the outer edge and very creamy and savory in the middle.
served with a jar gravy cut with honey and flour.
did you say that was turkey?
or served in a puff pastry

So I said to my Cardiologist, "I eat a lot of turkey how could this have happened?"
He then asked, "Just how much turkey did you have?"
"Doc, I only had a couple of turkey balls!"
"What's in them?"
"Turkey, cheese and sausage."
The Doc fainted and by the time he was revived I was miles away. -
AWESOME, and the pics are perfect as usual....I was thinking crab/shrimp in the middle....hmm...crustacean balls!
