OT: leftover Mashed potatoes

ohhhhh yess! mix with some grated cheese, chopped green onion, an egg, a tsp of four and your favorite herbs or spices if you want to flavor it up. form into a flat cake about 1/2 to 3/4 thick and about 4-5 inches across. If you do them tonight and put in the frig to get cold and set up it works better. I use the cast iron pan and get it hot and add a pat of butter lay the pancake in the melted butter and cook till golden. flip once to cook on the other side. give them time to get golden so they hold together when you flip them. enjoy. some crumbled bacon is a nice touch too.

OMG...a memory form the past. Or not so distant past. I loved potato pancakes. I just use an egg, and some crunched up saltine crackers. Fry them in some oil...or better...left over bacon grease. Yumm. My kids love them too.

My Mother used to swear that my sister and I purposefully peeled more potatoes (wink wink) than she (Mom) had asked us to do just so we would have left over "mashed tators". There is no way that you can't do potato pancakes that won't work!
