I have spatchcocked a chicken and have had very good results. Can a turkey be spatchcocked? When I have done the chicken, i used only s&p and coated the bird with a butter rub. I do NOT want to brine the turkey and am wondering if spatchcocking a turkey is possibe and what procedure is used for the cooking. And then, what about the dressing. How do you deal with that since there is no cavity to stuff?
Wanting to try something different, but not sure how to go about it.
Thanks to all in advance.

You can, but remember when you do you have to have twice the grill space. Cook it the same way you do the chicken, just longer.
Dressing not stuffed in a bird is well dressing. Put it in loaf pan and bake it. If you do it in the egg make absolutely sure the smoke it clear. -
Do it just like chicken. It works great.

Hey Rick in Crystal Lake,
The latest issue of Food & Wine Magazine (November 2008) has a receipe for "Grilled Butterflied Turkey with Caraway-Ancho Gravy". The receipe might be of interest to you.
Like Celtic Wolf says just treat that turkey like a chicken. Hopfully it won't taste like chicken.
